Strawberry Snowbank Pie
1 Qt Strawberries
Baked Pie Shell (Optional)
1 1/4 cup Sugar
1/2 cup Water
1/2 teaspoon Cream of Tartar
Pinch of Salt
2 Egg Whites
1/2 teaspoon Vanilla
Mix sugar, 1/2 water, and Cream of Tartar in pan. Cover and bring to a boil. Uncover and cook to 240 degrees on candy thermometer. Add salt to egg whites and beat with a mixer until stiff. GRADUALLY pour syrup into egg whites beating until mixture forms STIFF peaks. Add vanilla. Pile on strawberries. Eat soon. Do not refrigerate.
