On our journey to eat well, one thing I always missed was pizza!! When I stumbled across a recipe for a cauliflower pizza crust, I was intrigued! After trying a few recipes, I modified a recipe to make it work for our family!
Here is What You Need:
1 Head of Cauliflower
2 Eggs
1-2 Tablespoons of Italian Seasoning (depending on taste preference)
3/4 cup of your choice of Shredded Cheese (I used Colby Jack in this one because that was what I had!)
A Pinch of Salt and Pepper
Here’s What to Do:
Chop the cauliflower in to smaller pieces. Using a food processor, shred the cauliflower. Add both eggs, Italian Seasoning, cheese, salt, and pepper. It should look similar to the picture below.
Make small round patties out of the cauliflower. Squeeze all excess liquid into the sink. If you have too much liquid, the “crusts” will be too runny. Add them to a baking sheet. I put them on a Silpat so they don’t stick to the baking sheet.
Bake in the oven at 400 degrees for 15 minutes. Flip to the other side and bake for an additional 15 minutes. I flip them one last time and broiled them for 2 minutes just to add a little more “crispiness” to my crust! Next, add your choice of pizza toppings! My kids love pepperoni and bacon – who can blame them!?!
Last step, ENJOY!!! Sammy was fairly certain that he deserved some pizza too! 😉
