A Healthy Sweet Treat

Who is on board the healthy eating train for the start of the new year? If you have made a resolution to try to eat better (who hasn’t?), then these healthy sweet treat energy balls are just the ticket to help you stay the course!

Briton actually found this recipe! (And he wrote it down for me! Pretty sure it was in high hopes I would make it for him!) I love that my recipe cards have dates! We have been making this one for almost 6 years and still love it! It’s a pretty easy recipe to follow! I love it because it is stuff that is actually good for you!! I always make at least a triple batch so I don’t have to get my hands and kitchen super messy several times! I am linking the exact products I used to because I was too lazy to go to the grocery store! Amazon to the rescue!

Ingredients

1 Cup of Oatmeal
1 Cup of Shredded Coconut
1/2 Cup of Peanut Butter
1/3 Cup of Honey
1/2 Cup of Flaxseeds (I used ground)
1/2 Cup of Chocolate Chips (We had a ton of Ghirardelli squares so we pounded those up!)
A Pinch of Salt
Add nuts if desired!

Add all ingredients to a large bowl. I did use my Cuisinart to chop my oats! But that is optional! After you add all the ingredients, use your hands and blend them together. Put them in the fridge for half an hour. Remove from fridge and roll into balls. I store them in a container with a lid and keep them in the fridge!

Happy New Year!
