Easy Breakfasts – Homemade Granola

Now that the school has started (or will start soon) for most of us, it’s time for some easy breakfasts that you can make ahead of time to make your mornings run smoother! Over the years, I have finally perfected this granola! I have tried several recipes and finally mixed them together to make one my family LOVES! We even have it for desserts some nights!

Ingredients

  • 3 cups of oats
  • 1 cup of coconut
  • 1 cup of chopped pecans (or nut of your choice)
  • 1 teaspoon of cinnamon
  • 1/2 teaspoon of salt
  • 1 cup of coconut oil
  • 1 cup of maple syrup (can use honey too)
  • 1 teaspoon of vanilla

Directions

  1. Preheat oven to 300 degrees.
  2. Line a cookie sheet with parchment paper.
  3. Combine dry ingredients (oats, coconut, nuts, cinnamon, and salt) in a mixing bowl. Stir until blended.
  4. Melt coconut oil on the stove or in the microwave for 45 seconds.
  5. Add the maple syrup or honey to the coconut oil.
  6. Add vanilla to the maple syrup and coconut oil. Stir to combine.
  7. Add wet ingredients to the dry ingredients and mix.

8. Spread mixture onto baking sheet.
9. Bake for 20-22 minutes stirring halfway.

OPTIONAL – Add a few chocolate chips when there is about 5 minutes left if your family likes chocolate!

Please note, the mixture will harden after it cools. So don’t be alarmed if it is still soft when it comes out of the oven!

We have been eating it on baked apples, by itself, on yogurt, or with fruit! This makes a great dessert too! I hope your family loves this as much as ours!
