I remember making runs to pick up a Mexican-style pizza when I was a teenager! But now that I am older and trying to eat a little healthier, I decided to give it a new spin at home! Today on the blog, I am prepping for spring! I am excited for outdoor eating, and wanted to share how I make this delicious meal at home with some of my favorite kitchen items from The Home Depot! I absolutely love this tool for chopping ground meat! This 3-piece set is perfect for just about anything you need to do in the kitchen! I browned the meat to get it ready for the pizzas! I absolutely love that they can clip right onto the pan!

I chopped the raw ingredients and left them on the cutting board so that each person can assemble the perfect pizza! The juicer is on the side too ready to add a little lime!

I don’t know what I did without my air fryer!! We use it all the time! This one is great because it does so many more things than just air fry – broil, bake, roast, dehydrate, reheat, rotisserie, toast, warm, convection! I popped the tortillas into the air fryer to get them crispy!

This portable chopper is perfect whipping up a little pico to put on top of the pizzas!

We love these acrylic tumblers too! They are great for the kids especially for spring when they’re running around outdoors!

And VOILA! Each pizza can be personalized for each guest! This is a family favorite!

Ingredients

  • Onion
  • Ground meat (I used turkey)
  • Taco seasoning
  • Enchilada sauce
  • Tomatoes
  • Cheese
  • Cilantro
  • Sour Cream
  • Refried beans
  • Lime
  • Onion

Directions

  • Preheat your air fryer to 430 degrees
  • Chop one onion
  • Cook the ground meat until fully cooked and add onion
  • Add taco seasoning. Mix according to packet’s instructions
  • Cook tortillas in the air fryer for 1 minute on each side until crispy
  • Spread refried beans on the crispy cooked shells
  • Add ground meat mixture to the bottom shell
  • Sprinkle some cheese on top
  • Drizzle on some enchilada sauce
  • Top with another crispy tortilla
  • Drizzle on some enchilada sauce
  • Sprinkle some cheese on top
  • Sprinkle on the diced tomatoes
  • Cook in the air fryer at 345 for 4-5 minutes until cheese melted
  • Top with your choice of toppings
  • ENJOY!
