Black Bean Soup

Soup weather is officially here! I made this for dinner, and it is a family favorite!! My sister-in-law shared it with me a few years ago! I love it because it is easy, I have most of the ingredients on-hand, and it is delicious!


  • 1 large onion chopped
  • Olive Oil
  • 4 cloves minced garlic
  • 1/2 cup rice
  • 2 carrots chopped (I used up the matchstick carrots I had in my fridge!)
  • 1/2 cup chopped celery
  • 1 t vegetable base
  • 2 cups water
  • 2 cans black beans not drained
  • 1 t cumin
  • 1/2 t dried oregano
  • Garlic salt and season salt to taste
  • Chopped cilantro (optional)


  1. Sauté chopped onion and minced garlic with a tiny bit of olive oil.
  2. Add remaining ingredients (minus the cilantro) into the pot.
  3. Cook until carrots and rice are tender.
  4. Garnish with chopped cilantro.
