One Pan Meal – Pasta Marinara

“Mom, look! We are just like Lady and The Tramp!” I made pasta marinara for dinner the other night, and it is always a crowd favorite! And it’s a mom favorite too because it is so easy to make! This one pan meal using my favorite pan makes clean-up so easy!

Ingredients

2 packages of Egg Fettuccine Pasta (You can really use any kind of pasta you want, but I used Trader Joe’s Gluten Free Egg Fettuccine Pasta, and we loved it!)
1 large diced onion
4 cloves minced garlic
Salt and pepper to taste
Drizzle of olive oil
1 can diced tomatoes (14.5 oz)
1 jar marinara sauce (I use Rao’s! SO DARN GOOD!)
2 large handfuls of spinach (I know, I know…. I should have measured, but that is just not how I cook! Ha!)

Optional: Add meat or meatballs.

Directions

I used these noodles from Trader Joe’s because they cook quickly and taste like homemade!

I love that this pan includes a strainer because it makes cooking and cleaning-up so much more efficient! Boil noodles according to package directions. Once noodles are cooked, remove them from the pan and empty the water.

Add chopped onion, garlic, salt, pepper, and olive oil to a pan. Sauté for about 4 minutes.

Add one can of diced tomatoes undrained.

Add one jar of marinara and stir.

Add two handfuls of fresh spinach and mix. Turn heat to low.

Cover for 2 minutes with lid to let spinach wilt.

Sauce is ready!

Serve over noodles and enjoy! Top with parmesan cheese if you so desire!
